For all the corn dog lovers out there who love the taste but not the effort. Mini Corn dog muffins are a great party food and easier to whip up than traditional corn dogs yet have the same delicious taste. Chopped up hotdogs mixed with this flavorful cornbread mix create a snack that is easy for younger children to eat and healthier too since the muffins are baked and not fried. Older kids will like the eat on the go mini muffins. Try these for your child’s next birthday party or as a fun treat when traveling or for a picnic. This recipe makes 24 mini Corn Dog Muffins.
- 6 Hot dogs
- 1 Box Jiffy Corn Muffin Mix
- 2 Eggs
- 1/2 Cup plain Greek Yogurt
- 1/2 Cup creamed corn
- 2 T Melted butter
- Non-stick spray
- Pre-heat the oven to 350.
- In a medium size bowl, thoroughly mix together the corn muffin mix, eggs, Greek yogurt, creamed corn and melted butter.
- Cut the hotdogs lengthwise into 4 sections, then chop across so that you end up with pieces no larger than 1/4″ to 1/2″ in size.
- Stir the hotdogs into the corn muffin batter.
- Lightly spray a mini-muffin pan with non-stick spray.
- Add a rounded tablespoon of the mixture to each cup.
- Bake for 15 minutes or until the muffins are golden brown.
- Serve room temperature with ketchup and mustard for dipping.
